Sweet Corn, Leek & Manchego Omelette

The creamy and buttery Manchego cheese pairs delightfully with the pop of sweet corn and the crunch of the leeks.

Ingredients

2-3 eggs

1 teaspoon butter or ghee

2 tablespoons leeks, sliced

1/8 cup organic corn, fresh or frozen

1-2 tablespoon Manchego cheese, grated

Salt and pepper to taste

Directions

1Crack eggs in separate bowl and whisk together.

2Melt ghee or grass-fed butter over medium heat and add whisked eggs.

3Add in corn, leeks and cheese to let cook through.

4Serve and enjoy!

Can't do dairy? Don't sweat it.  Swap the cheese for creamy avocado slices for the same texture.
