Directions
1Preheat oven to 350 degrees.
2Crack eggs in a medium sized bowl and whisk together.
3Chop green onions and slice purple potatoes with a mandolin.
4In an iron skillet, melt ghee over medium heat.
5Add sliced potatoes and cook for 5-6 minutes, until the potatoes start to become tender.
6Add chopped green onions and cook for 1-2 minutes.
7Pour eggs into pan.
8Put skillet into oven and cook for 15-20 minutes.
9Let cool for a few minutes, then cut and serve.
If you have extra greens and veggies or protein that you want to add like bacon or sausage, feel free to add.
I love creating these skillets at the start of the week and popping out a slice daily to fill me up.
