”Kitchen Sink” Omelet

Otherwise known as the 'Everything' Omelet.  This is a fun recipe to whip up when you have a lot of lose end veggies to use.  I literally see how many veggies I can use from my fridge.  Get creative with this one, you don't need to follow the exact ingredient list, but this combo is quite scrumptious.

  • Yields: 1 Omelette

Ingredients

Eggs

2-3 eggs, cracked and whisked

1 Tablespoon butter

Filling

1 green onion, chopped

2-3 cherry tomatoes, chopped

1/4 cup spinach

1 slice of bacon

1/4 cup shredded cheese (optional)

1 Tablepsoon Giardiniera (optional)

Salt and pepper to taste

Directions

1Prepare all ingredients.

Eggs

1In a medium skillet, melt butter to coat pan.

2Pour in egg mixture and swirl around to coat pan and edges.

3Start to push the cooked portions from the edge of the pan to the center so that any uncooked portions of the eggs can reach the hot surface and cook. Continue to tilt pan and cook on low heat.

Filling

1When the eggs start to thicken and don't look runny, now you can add your filling on one side of the omelet (it doesn't matter what side.)

2Sprinkle cheese on top of filling.

3Fold half of the omelet over the filling and you're ready to serve.

Get creative! Invent your own fillings.  There is not right or wrong way to make an omelet, it's whatever you prefer or fancy.

Here's some great ideas for fillings: shredded Cheddar, Gruyere or Swiss cheese, sour cream or yogurt (plain), diced ham or sausage, bacon, chicken, sauteed mushrooms, peppers, tomatoes, onions, herbs or even leftovers from last night's dinner.
