Southwest Omelet

If this doesn't get you up in the morning, I don't know what will.  You'll love the zesty flavors that come together to wake you AND your tastebuds up.

  • Yields: 1 Omelette

Ingredients

2 eggs, lightly beaten

1 Tablespoon butter or ghee

1/2 cup cherry tomatoes, chopped

1/2 ripe avocado, cut into 1-inch slices

1 Tablespoon cilantro, chopped

1 Tablespoon taco seasoning

Salt and pepper to taste

Salsa (optional)

Yogurt (optional

Directions

1In a large skillet, melt butter.

2Pour eggs into the same skillet; sprinkle with salt, pepper and taco seasoning. Cover and cook over low heat for 3-4 minutes.

3Fold omelet over onto plate.

4Sprinkle with cilantro, add avocados, salsa, tomatoes and yogurt to top of egg.

5Serve and enjoy!
