Gluten Free Apple Berry Crisp
May 25, 2017
Nothing (and I do mean nothing) makes you feel more at home than walking into the kitchen and smelling the sweet aroma of an apple berry crisp. My new favorite is that I love adding peaches to my apple crisp - it adds this awesome trifecta of colors, tastes and smells. Oh and friends, have you tried HALO Top ice cream? It is deeeeelicious! I love a scoop of the Vanilla Bean on this warm crisp.
- Prep: 15 mins
- Cook: 35 mins
- Yields: Serves 6 to 8
Ingredients
Filling
5 medium apples, sliced thinly
½ cup dried cranberries or fresh blueberries
1 cup sliced fresh or frozen peaches (optional)
1 tablespoon fresh lemon juice
Topping
6 tablespoons grass-fed butter, melted
½ cup rolled oats, gluten free
½ cup gluten free all purpose flour (I like to use Arrowhead Mills)
Directions
1Preheat the oven to 350°F.
2Slice your apples into 1 inch pieces and put in a large bowl.
3Add berries, lemon juice, and coconut sugar, and toss to combine.
4Butter a 9x13 glass baking dish and set aside.
5In a medium bowl, combine all the topping ingredients and stir until combined.
6Pour apples and other fruit into the prepared dish.
7Spread the topping mixture evenly across the fruit.
8Bake until the fruit is soft and the topping crisp, for about 35 minutes, watching carefully that topping doesn’t brown too much.
9Let cool for 15 minutes.
10Serve warm or room temperature with vanilla ice cream or creme fraiche.
FAB Tip: I've become a huge fan of Arrowhead Mills for my gluten free flour and for gluten free oats, I always rely on my good friends at Bob's Red Mill.
