Date and Cashew Protein Balls

Ingredients

1 cup whole pitted dates

¾ cup pecans, toasted

3 tablespoons maple syrup

3 tablespoons cashew butter

1 teaspoon orange juice

Dash of kosher or sea salt

¼ cup toasted pecans, finely chopped or shredded coconut

Directions

1Place dates and pecans in a food processor and process until finely chopped.

2Add maple syrup, cashew butter, orange juice, and salt.

3Scoop tablespoon size portions and shape with greased hands into balls.

4Roll each ball in chopped nuts (or coconut or date sugar).

5Place on wax paper.

6Let stand at room temperature for 30 minutes before serving or storing.

7Store in an airtight container separating balls with layers of wax paper, in the refrigerator for up to 4 days.
