Ingredients
1 small, medium watermelon, cut into small squares without the rind
1 small red onion, sliced thinly
1/2 cup fresh basil, chopped
1 package Feta, cubed
1 small cucumber, sliced
2 Tablespoons organic olive oil
Balsamic Vinegar (optional)
Directions
1Rinse and prepare all ingredients.
2In a bowl, add watermelon, feta, chopped basil, cucumber and red onion.
3Drizzle olive oil and balsamic vinegar to taste.
4Gently toss, serve, savor and enjoy!
FAB Tip: Sub out basil for mint for a slightly sweeter taste.
