These Energy Bites are the bomb! Quick and easy, they're a great grab-and-go protein-packed snack with a hint of sweetness. Plus they're dairy, gluten, soy and corn free!

Yields: 12- 14 balls
Ingredients
1 cup gluten-free rolled oats or gluten-free oatmeal
3/4 cup almond butter
1/3 cup honey or maple syrup
1/3 cup powdered coconut milk
1 tsp vanilla (optional)
1/3 cup mini chocolate chips or dried fruit
Directions
1Heat honey for 20 -30 seconds.
2Add oats to honey and let sit for a few minutes.
3Add almond butter, powdered coconut milk, and vanilla.
4Mix well.
5Mix in mini chocolate chips or dried fruit.
6Use a small cookie scoop to scoop out balls onto wax paper.
7Let them sit out for a few minutes, then refrigerate.
