Directions
1Melt butter in a large, pot over medium-high heat.
2Add chopped vegetables and onions and cook until the onions are translucent, about 10 minutes.
3Now stir in the lentils, ginger, spices and vegetable broth into the pot with the apple and vegetable mixture.
4Bring to a boil over high heat, reduce to medium-low, cover, and simmer until the lentils and vegetables are soft, about 30 minutes.
5Blend soup in batches by filling the pitcher no more than halfway full.
6Once blended, transfer back to the stove over high heat for 10 minutes.
7If you need to thin it out, add water for your preferred consistency.
8Serve with yogurt for garnish.
