Roasted Carrots

Ingredients

1 pound carrots, peeled and sliced on the diagonal 1/2- inch thick

2 tablespoons olive oil or ghee

2 Tablespoons chopped fresh parsley

Salt and pepper, to taste

Directions

1Preheat oven to 425 degrees Fahrenheit.

2Toss carrots with oil, salt and pepper on a rimmed baking sheet.

3Roast until golden brown and tender, stirring occasionally, 25 to 35 minutes.

4Remove from the oven and toss with parsley.

Feel free to add different spices and herbs to roast.
