Sauteed Kale with Crispy Onions

This recipe is super simple.  It makes an excellent addition to an over-easy egg for breakfast or savory side.

  • Prep: 10 mins
  • Cook: 15 mins
  • Yields: 2-3 Cups

Ingredients

1 bunch curly or red kale, de-stemmed, washed, chopped

1 onion, sliced thinly

1 Tablespoon ghee

Salt and pepper to taste

Directions

1Preheat a skillet over low heat.

2Add ghee and let melt.

3Add the sliced onion, stir to coat with ghee, then saute for 10-15 minutes, stirring occasionally.

4Add the kale on top along w/ 1-2 tablespoons water.

5Increase the heat to medium.

6Saute the kale for about 5-10 minutes until the kale is crispy on the outer edges.

7Add some salt and pepper to taste.

8Enjoy!

Juicy Tip:

  • Feel free to swap out kale for collard greens, baby kale, spinach and/or chard.
  • Feeling spicy? Experiment with different herbs and spices and find a combo that works for you and your tastebuds.
