Shortbread Gluten Free Lavender Pecan Cookies

Simply sweet, these little cookies will melt in your mouth.

Ingredients

8 Tablespoon coconut flour

4 Tablespoon butter, room temperature, but still solid.

1 Tablespoon maple syrup (or honey)

½ tsp vanilla extract

1 Tablespoon dried lavender (optional)

1/4 cup raw pecans (optional)

Directions

1Preheat oven to 350 degrees.

2In a small bowl, cut butter into coconut flour.

3Add maple syrup and vanilla and cream until smooth.

4Using a tablespoon, scoop dough onto a baking sheet.

5Gently press down on the tops of the cookies with a fork to flatten or press in a raw pecan.

6If using lavender, sprinkle into dough, mix and scoop onto baking sheet.

7Bake for 8-10 minutes until lightly browned on the bottom.

8Let the cookies cool completely on the pan.

9Serve with your favorite kind of milk!
