Directions
1Preheat oven to 375 degrees. Chop green onion and set aside.
2Rinse potatoes.
3With a mandoline, thinly slice potatoes.
4In an iron skillet, melt butter or ghee for about 1-2 minutes.
5Add potatoes and season with salt and pepper.
6Transfer to oven and let bake for about 15-20 minutes or until golden brown.
7Top with sliced green onions and serve.
