Soba Noodles with Sunbutter Sauce

Serve this dish chilled or warm and get ready for love at first bite!

Directions
1In a medium saucepan, cook soba noodles according to package directions. Prepare cilantro, red pepper, carrot, scallions, and sesame seeds and set aside.
2In a separate small saucepan, heat oil over a medium-high flame. Add the garlic, chili, Kaffir lime leaves, lemongrass, and shallots, and cook for several minutes while stirring.
3Add the coconut milk, date sugar, sunflower seed butter, salt, and water.
4Stir to blend well and bring to a boil.
5Lower the heat to medium-low and cook for 20 minutes, uncovered, stirring once in awhile to prevent sticking.
6The sauce should have reduced and should be thick enough to coat the back of a spoon. If you need to cook longer, go ahead!
7Keep warm until ready to serve;discard the Kaffir lime leaves.
8Drain noodles and place in a large mixing bowl. Add only half the sauce and toss well.
9Add more sauce as needed.
10Fold in cilantro, red pepper, carrots, and scallions.
11Sprinkle with sesame seeds. Serve warm or room temperature.
FAB Tips: I love using sunflower butter instead of peanut butter and I usually just pick up a couple bottles at my local Trader Joes.
