I don't know about you, but I can't pass up a bowl of homemade mashed potatoes, until I found this creamy, fluffy cauliflower mash recipe. You won’t even notice that you’ve made a swap!

Yields: 2 to 4 Servings
Ingredients
1 medium head cauliflower
½ teaspoon minced garlic
½ cup chicken stock
1 Tablespoon coconut oil, grass-fed butter or ghee
Salt and pepper to taste
½ teaspoon chopped fresh or dry chives, for garnish
Directions
1Boil 1-2 quarts of water over high heat.
2Cut cauliflower into smaller pieces and add to hot water.
3Cook for about 6-10 minutes or until well done. Should be soft and able to put a fork through easily.
4Once done, drain cauliflower well.
5In the same pot or in a large bowl, using a blender, blend cauliflower, garlic, chicken stock, pepper, sea, salt
6Garnish with chives or parsley.
Juicy Tip:
Try roasting the garlic and adding a little fresh rosemary for a whole new taste.
