Tender and fragrant, these poached pears are sure to impress for a delicate dessert. Have leftovers? Throw them in yogurt, quinoa or oatmeal.
- Prep: 10 mins
- Cook: 40 mins
- Yields: 4 Servings
Directions
1Peel the pears.
2Using small melon baller, core pears from bottom of wide end.
3Trim bottoms and leave stems on.
4In a large saucepan (that will fit 4 pears), add wine, pomegranate juice, water, sugar, vanilla bean, and orange zest, and bring to a boil.
5Reduce the heat, add the pears, and simmer until the pears are tender, yet slightly firm in the center, about 30 minutes
6Can be made 4 hours ahead. Let sauce and pears stand at room temperature. Rewarm sauce before continuing.
7Remove the pears and vanilla bean, and bring the mixture to a boil and cook over medium heat until the liquid is reduced to a syrup.
8Serve pears warm or room temperature on individual plates and drizzle with poaching syrup and hazelnuts.
FAB Tip: I like to use coconut sugar vs. regular old brown sugar because it has a bit more nutrient density. One of my favorite brands of coconut sugar is by Wholesome.
